It's been awhile, so I thought I'd offer an update on my crazy life, and an easy new recipe!

Back to the male pictured above. His name is Sam. He is fluent in sarcasm, english, czech, and slovak.

- 1 tbs butter
- 1 clove garlic, minced or grated
- 1 tbs flour
- 1/2 cup milk
- 1 ounce cream cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup greek yogurt
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp pepper
- 1/2 cup chopped spinach
- 1 (6 ounce) jar of artichoke hearts
- 8 slices thick sourdough or italian bread
- butter, for spreading
Directions: In a frying pan melt butter over medium heat, add garlic and let simmer for a minute. Add flour and milk and stir mixture. Add all cheeses, stirring until melted. Stir in greek yogurt, and spices, until evenly mixed. Add spinach and artichokes, and let simmer until spinach is cooked. Set aside.
Then use spinach and artichoke cheese mixture as the substance of your gourmet grilled cheese.
It's sure to impress any sombrero-wearing weirdo you have a crush on, guaranteed.
